These healthy lemon cookies are the perfect Easter snack: vegan, gluten-free, sugar-free – and completely food-waste-free thanks to cashew pulp from the Kuvings Slow Juicer!

Easter is just around the corner – and what's better than homemade, healthy cookies? These little lemon dreams are not only delicious, but also a true #zerowaste highlight!

This is what you need:

  • 1 cup oat flour
  • 1 cup cashew pulp (after pressing cashew milk)
  • 1/4 cup coconut oil
  • 1/4 cup agave syrup
  • 1 tbsp baking powder
  • Juice & zest of ½ lemon
  • a pinch of love

Here's how:

  1. Mix everything together – the mixture should have the consistency of play dough.
  2. Form small balls and flatten slightly.
  3. Bake at 180 °C for about 10-12 minutes.
  4. Decorate with melted white chocolate if desired – for pink, simply add raspberry powder!
