Fennel, apple, and pear juice + muffins made from the pomace – for more sustainability in summer cooking

For 1 glass of juice you need:
– 1/2 fennel
– 1 apple
– 1 pear
Put everything into the slow juicer – in less than 15 seconds you will have a fresh, vitamin-rich juice.

And the pulp? It goes directly into the batter for moist muffins. Ideal as a snack, for a picnic, or for weekend meal prep.

For the muffins you need:
– The pomace from fennel, apple and pear
– 1 egg
– 2 tablespoons flour
– 1 tbsp coconut blossom sugar
– 1 tsp baking powder

Preparation:

  1. Mix dry ingredients
  2. Stir in the egg, then add the pomace
  3. Fill batter into lightly greased muffin tins
  4. Bake in a preheated oven at 170 °C for about 20-25 minutes – don’t forget to test with a skewer

Tip for hot summer days: The muffins also taste wonderfully refreshing when slightly chilled – perfect with a glass of ice-cold juice.
