Juice becomes Softbun – Carrot Hot Cross Buns with Pomace

Freshly squeezed yesterday, deliciously baked today – and completely #zerowaste !
These carrot hot cross buns get a wonderfully moist texture and a delicately spicy flavor from the carrot juice pulp. Served warm, they're simply heavenly—perfect for brunch, afternoon coffee, or just when you want to treat yourself.
Ingredients for approx. 6–9 pieces
- 450 g flour
- 1 sachet of dry yeast
- 40 g cane sugar
- ½ tsp cinnamon
- 1 pinch each of cardamom and clove powder
- 200 ml carrot juice (lukewarm, e.g. pressed with a Kuvings Slow Juicer)
- 60 ml cream
- 1 egg
- 50 g soft butter
For the cross
- 50 ml water
- 80 g flour
How it works
- Heat carrot juice and cream to lukewarm, stir in sugar, add yeast and let it rise for 10 minutes.
- Add all remaining ingredients and knead into a smooth dough.
- Cover the dough and let it rise for 30–90 minutes.
- Form 6-9 rolls and place them on a baking tray.
- Mix a paste from water and flour and pipe crosses onto it.
- Bake at 180°C fan oven for approx. 25 minutes.
- Spread with some cream while it’s still hot – done!
