Carrot cake balls

Ingredients for 16 pieces:
- 200 g carrot pulp
- 150 g dried soft apricots
- 200 g almonds
- 1 tsp cinnamon
- 4 tbsp coconut flakes

1. Place all ingredients except the coconut flakes in a high-performance blender and blend on the highest setting.
2. Form the mixture into balls and roll the balls in coconut flakes.
