Green pomace pesto

Who says pomace is waste? Use your vegetable pomace to create a delicious and sustainable pesto. Here's a recipe for a green pomace pesto that's perfect with pasta, sandwiches, or as a dip.

Ingredients
- 1 cup vegetable pulp (e.g. from spinach, parsley, lemon)
- 1 cup fresh basil
- 1/2 cup nuts (e.g. walnuts, pine nuts)
- 1 clove of garlic
- 1/4 cup olive oil
- 1/4 cup grated (vegetable) Parmesan
- Salt and pepper to taste

preparation
1. Preparation: Lightly roast the nuts in a pan without oil until golden brown.
2. Blend: Place the pomace, basil, roasted nuts and garlic in a blender or food processor and chop roughly.
3. Add oil: Slowly add olive oil while the blender is running until a smooth consistency is achieved.

4. Season: Add Parmesan, salt and pepper and mix again until well blended.
5. Season: Finally, season to taste and pour into a clean glass.

My tip: Freeze the pesto in ice cube trays to store it in portions and have it ready to hand at any time.
