Lemony fresh: Homemade lemon curd

🍋 Ingredients

  • 6 lemons
  • 6 eggs
  • 400 g raw cane sugar
  • 150 g butter
  • Vanilla

preparation

  1. Rinse five glasses with hot water. Zest a lemon and set the zest aside.
  2. Squeeze all the lemons. It's even easier with the Kuvings citrus press attachment !
  3. Melt sugar and butter in a saucepan. Add lemon juice, vanilla, and lemon zest.
  4. Whisk the eggs in a bowl and add them to the butter, sugar, and lemon mixture in the saucepan. Heat the mixture, stirring constantly, until it thickens (similar to vanilla pudding), but do not let it boil. Temperature: approximately 90°C.
  5. Quickly pour the hot mixture into sterilized jars and seal. Store in the refrigerator. The jars will keep unopened for at least 4 weeks.
