Lemon Curd

Perfect as a spread on fresh brioche or croissant or as a sophisticated filling for your favorite cakes and tarts. Thanks to the freshly squeezed lemons, the curd is wonderfully lemony and refreshing.

- 6 lemons
- 6 eggs
- 400 g raw cane sugar
- 150g butter
- Vanilla

1. Rinse five glasses with hot water. Grate a lemon and set the zest aside.
2. Squeeze all the lemons. It's even easier with the Kuvings citrus press attachment!

3. Melt the sugar and butter in a saucepan. Add the lemon juice, vanilla and lemon zest.
4. Whisk the eggs in a bowl and add them to the butter, sugar and lemon mixture in the pan. Heat the mixture, stirring constantly, until it thickens (similar to vanilla pudding), but do not let it boil. Temperature: approx. 90°C.
5. Quickly pour the hot mixture into the sterilized jars and seal. Store in the refrigerator. The jars will keep unopened for at least 4 weeks.
