Super Juicy! Orange carrot cake
Mix all dry ingredients in a large bowl. Then add all the other ingredients and knead. The dough should be nice and moist. If necessary, add a little more oil or water.
Taste the dough and add more sugar if necessary.
Preheat the oven to 180 degrees and grease your loaf tin with plenty of vegan butter. Then pour the dough into the mold and smooth it out.
Bake the cake for 45-50 minutes.
- 500g flour
- 1 packet cream of tartar baking powder
- 240g grated coconut
- Orange pomace from 5 oranges
- Carrot pomace from 5 carrots
- 200g coconut blossom sugar
- Some agave syrup
- Splash of water or orange juice
- 350 oil
- 3 tbsp cinnamon
- 1 level tbsp turmeric
Meanwhile, make icing.
For this you need:
- 3-4 tbsp lemon juice
- 200g powdered sugar
Mix both ingredients together. Once the cake is ready and cool, you can take it out of the mold and pour the glaze over it.
The glaze will set quickly if you put the cake in the fridge again.
You can also use 6 grated carrots and 2 well-peeled, pureed oranges as a substitute for the pomace.
