Orange carrot cake

Super juicy! Orange carrot cake

Mix all dry ingredients in a large bowl. Then add all other ingredients and knead. The dough should be nice and moist. Add a little more oil or water if necessary.

Taste the dough and add more sugar if necessary.
Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit) and grease your loaf pan with plenty of vegan butter. Then pour the batter into the pan and smooth it out.
Bake the cake for 45-50 minutes.

Recipe:

  • 500g flour
  • 1 pack of cream of tartar baking powder
  • 240g desiccated coconut
  • Orange pomace from 5 oranges
  • Carrot pomace from 5 carrots
  • 200g coconut blossom sugar
  • Some agave syrup
  • Splash of water or orange juice
  • 350 oil
  • 3 tbsp cinnamon
  • 1 level tablespoon turmeric

Meanwhile, prepare the icing.

For this you need:

  • 3-4 tbsp lemon juice
  • 200g powdered sugar

Mix both ingredients together. Once the cake is ready and cooled, you can remove it from the pan and pour the glaze over it.

The icing will set quickly if you refrigerate the cake again.

As a substitute for the pomace, you can also use 6 grated carrots and 2 well-peeled pureed oranges.
