Beetroot balls

Don't throw away the pomace!
@veganwings_ shows you how to turn your beetroot pomace into incredibly delicious beetroot balls!

Ingredients:
• Pomace from 10 beets
• 7 tablespoons of flaxseed
• 13 tablespoons oats
• 2 cloves of garlic
• 1 large red onion
• 1 stick of celery
• 1 medium carrot
• 4 tablespoons garlic mayo
• 2 tbsp mustard
• 3 tablespoons chia seeds
• 3 tablespoons tomato paste
• 3 tbsp oil
• Salt, pepper, garlic powder

Preparation:
1. Mix the mustard, chia seeds, tomato paste, garlic mayo, oil and a dash of water in a bowl and leave to infuse.
2. Grind the oats and flaxseeds into flour in a blender.
3. Chop the garlic, onion, celery and carrot and sauté in a pan with oil. 4. Add beetroot pomace and sauté briefly.
5. Stir all ingredients together in a bowl and season with salt, pepper and garlic powder.

6. Form the mixture into small balls and fry in a pan with enough oil on a medium heat. Turn after about 5 minutes. Complete!

Yoghurt dip with parsley:

Ingredients:
• 4 tablespoons vegan yogurt
• 2 tablespoons garlic mayo
• 1 tsp mustard
• 2 sprigs of fresh parsley chopped
• Salt pepper

Preparation:
Mix all ingredients in a bowl and season with salt and pepper.
