Who wants beetroot soup?
Do you have any beet pulp left over after juicing?
The pomace is far too valuable to throw away!
So it's best to recycle the pomace and enjoy this delicious beetroot soup.
100g beetroot pomace
50ml vegan cream
1 tbsp vegetable broth
1 clove of garlic
Cress as a topping
Bring the water and pomace to a boil in a saucepan. Add the garlic clove and spices. Bring the soup to a boil. Remove the pan from the heat, add the cream and puree everything. If the soup is too thick for you, you can add a little more water. Serve with fresh cress :)
