Vegan pasta sauce with roasted vegetables

Roasted vegetables meet pasta enjoyment

This creamy, vegan pasta sauce recipe shows how easy it is to conjure up a flavorful sauce from fresh roasted vegetables—perfect for quick after-work meals. In the CB850 Professional Power Blender, everything is blended into a smooth and flavorful consistency in no time.

Ingredients: Onion, garlic bulb, carrot, zucchini, eggplant, bell pepper, cherry tomato mix, fresh basil, olive oil, approx. 400 ml pasta water, a dash of vegan cream (optional)

Spices: oregano, basil, rosemary, salt, pepper

preparation

  1. Wash, deseed, and roughly chop the vegetables. Halve the garlic and place everything on a baking sheet.
  2. Mix with oil and spices and roast at 200°C for 30-40 minutes until golden brown.
  3. Let it cool slightly, then press the garlic cloves out of their skins and add them to the Kuvings CB850 along with the pasta water. Close the lid, select the program, and blend.
  4. Serve pasta with the sauce and fresh basil – enjoy!
