Zero-Waste Muffins – Sustainable and Delicious

Ingredients for about 12 muffins
- 200 g pomace (apple & pineapple)
- 50 ml freshly squeezed apple-pineapple juice
- 100 g liquid coconut oil
- 70 g coconut blossom sugar
- 2 eggs or plant-based egg substitute
- 240 g oat flour
- 1.5 tsp baking powder
- 0.5 tsp baking soda
preparation
- Preheat the oven to 180 degrees and prepare a muffin tray with paper baking cups.
- Mix all ingredients into a smooth batter and fill it into the molds.
- Bake the muffins for about 40 minutes. Use the toothpick test to check if they're baked through.
