Ingredients for about 12 muffins

  • 200 g pomace (apple & pineapple)
  • 50 ml freshly squeezed apple-pineapple juice
  • 100 g liquid coconut oil
  • 70 g coconut blossom sugar
  • 2 eggs or plant-based egg substitute
  • 240 g oat flour
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda

preparation

  1. Preheat the oven to 180 degrees and prepare a muffin tray with paper baking cups.
  2. Mix all ingredients into a smooth batter and fill it into the molds.
  3. Bake the muffins for about 40 minutes. Use the toothpick test to check if they're baked through.
