Lemon sorbet

Ingredients for about 4 people
- 250 g sugar
- 250 g water
- 2 fresh egg whites
- 250 ml lemon juice (approx. 4-5 lemons)
- 1 pinch of salt
- Fresh mint (for decoration)
preparation
1. Combine sugar and water in a small saucepan and simmer over low heat until the sugar is completely dissolved. Then let it cool.
2. In the meantime, beat the egg whites with a pinch of salt until stiff.
3. Squeeze the lemon juice using the Kuvings Slow Juicer and mix it with the cooled sugar syrup. Pour the mixture into a glass container.
4. Carefully fold the beaten egg whites into the lemon-sugar mixture. The two components will fully combine during freezing.
5. Place the mixture in the freezer and whisk every 30 minutes for about 2.5 to 3 hours. Stir with a spoon at the end to prevent ice crystals from forming and keep the sorbet creamy.
6. Garnish with fresh mint before serving and enjoy!
